New slaw, old slaw ... Coleslaw!


What's cooking luvs?

So the 3 most common salads on the typical Bajan buffet are, tossed salad, potato salad and ... you guessed it; coleslaw. Although these are common favorites because they are delicious, it doesn't mean that we can't spruce them up with a little love and try something different.

This recipe adds a little zip and a pop of colour to the traditional coleslaw, enjoy!



Red Cabbage Coleslaw with Toasted Almonds and Poppy Seeds

Ingredients

Serves 2-4 persons
Slaw-
1 cup shredded red cabbage
 1/2 cup grated carrot
 1/4 cup roasted almonds
 1 tbsp minced onion

Dressing
2ozs Mayonnaise
1tbsp fresh lime juice
1 tbsp honey
1 pinch cinnamon
1tsp poppy seeds
Salt & Pepper to taste

Method: 

Mix all the slaw ingredients together in a large bowl (reserving a few almonds for garnish). 
In a smaller bowl, mix the dressing ingredients together until combined. 
Pour dressing over the slaw and toss lightly. 
Garnish with remaining toasted almonds and refrigerate until chilled. 
Serve and enjoy the yumminess!
