Too much to tell & Wedding Bells!


Hi guys,
So besides being super busy, my laptop is on the fritz! So I couldn't blog for a while.
But I'm back with some catching up in mind =)
Well one of them was 2 weekends ago! It was a beautiful garden wedding on the west coast of the island. It was a cocktail affair with tidbits of Bajan everywhere! From live singers to short stories the party was on!
We didn't get alot of pics since we were running around like crazy people but we will definitely share what we did get and more when the photographers send us theirs too =)

Girlfriends & Cupcakes

Jumping Jehosaphat! Busy is an understatment in this place! I seriously can hardly tell if Im sitting or standing. We are sooo super busy. So between shuffling cakes in and out of the oven and making sauces and canapes for this weekend's events I have squeezed a moment of time out to share with you.

I just wanted to share the photos of our cupcakes that a friend featured at her booth at the Girlfriends Expo here in Barbados. I have so much more to share but 1st things first.


So here goes...

Vanilla Bean cupcake with our signature blue fondant blossom
Chocolate fudge truffle cupcakes (truffles by the chocolatier that featured us)


Red Velvet Cupcakes with whipped Cream Cheese Frosting topped with fresh white chocolate filled Raspberries.

Hype and Happy Cakes

Hi guys,

Whats cooking in your kitchen this weekend? As usual the BD kitchen is super duper busy.

This week more than ever! Here is the scoop on some of the events that took place this week.

First off lots of birthdays =) from cakes to favors.


Then we hosted a concession booth at an alumni meet for my old school Springer Memorial!!!
It was part of the celebrations to mark the 45th anniversary of the school. That was quite hectic.

At the last minute we were given a wonderful opportunity to advertise and promote our pastry shop "As Cute as A Cupcake" at the Love Fm Girlfriend Expo. We made some yummy samples which were featured at the JEM's Gourmet Chocolates Booth. Thank you JEM's!

Then today more birthdays and a new corporate client. So we have been busy as bees.


I have so much to share with you its really too much for one post. But we have done quite a few cakes recently and all so special that I just have to let you see them. So we'll start there.

Cakes

#1. Indian Inspired Birthday Cake with matching cuppies
#2 Hulk Cake for a 6yr old Hulk fan
#3 Birthday cake for a guy who likes music, cooking and basketball ordered by his sweet girlfriend

#4 Ordered by a young lady for her own birthday, she wanted blue, roses and the word smile. I had a blast making this cake =) but then again I enjoy them all.

For the love of food!

So anyone who knows me, knows that partying is just not my style. Crowds of loud tipsy people is a no-no for me. But yesterday we catered an amazing cocktail party after a performance of some of the singers from the "Young Money" Rap Group here in Barbados! It was an experience. Thankfully I didnt have to be anywhere near the hype but the food was a hit! We set up in the VIP Lounge and the event was from 11pm-4am. We couldn't take pics of the VIPS but we got some of the lounge and the food. I know you'll love the menu =)

Guava Heaven!

If you live in the tropics, more specifically Barbados you know that right now guava's are beyond plentiful. They are everywhere! I personally love the fruit!

If you have never had a guava you are missing out. The fruits outside is green and light sweet but can be a bit rough but the pulp is sweet and juicy and usually pink with small golden seeds. The entire thing is edible and its taste is unique to the fruit. Some describe it as a kiwi-strawberry-mango flavor. Doesn't that sound delish?!
So of course I have been dabbling with this fruit to make all sorts of things in my kitchen. So today I will share with you the recipe for my guava puree which is the base lots my new creations and the filling our seasonal Guava Pineapple Cupcake! Its even good all by itself over some vanilla ice cream! O yeah hunny!


Guava Puree

1 Cup of ripe guavas cut quartered

1/2 brown sugar

1 tbsp Butter

Juice of half a lime

Cut and quarter 1 cup of ripe guavas
Squeeze the lime juice over the guavas and let sit for 5mins

Meanwhile melt butter in a small saucepan


Add brown sugar and stir




Add guava and stir, allow to simmer

Look at that!... ok stop drooling, a few minutes more

Ok now we are ready!



Place guavas in blender and puree until smooth.


Strain all the goodness out and discard the seeds
Ta da!Guava Pineapple Cupcake!
Guava Cupcake with Pineapple Butter cream and Guava Puree filling drizzled with guava and rum syrup and topped with a Guava Cheese Candy!

You can use this puree also in meat sauces and curries.
