Berry Much!

So it has been quite a week! Lots of January parties and birthdays. Look out for photos soon.
Also the orders have been coming in for Valentines =) I guess we aren't the only ones excited!

Valentine's is special for us because Chef Ed popped the question during this season, so whenever it comes around we are a happy as can be.

Well one of my favorite things (besides chocolate) about the love month are the Strawberries!
Of course you see the yummy chocolate covered ones and the berries and cream. But the Edster and I love to use them every chance we get.

Here are some photos of yummilicous berry treats and a recipe for a refreshing smoothie!



Strawberry Champagne Cupcakes


Strawberry, Mandarin Orange and Almond Salad


Strawberry Watermelon Smoothie

1/2 cup Ice Cubes
1 cup water melon
1/2 cup Strawberries
1/2 tsp orange zest
1 tsp honey

Method

Place all ingredients in blender and blend until ice is broken up.
Place in a chilled glass and garnish with a strawberry. Enjoy!!!

Love Month Goody Sneak Peek

Happy Weekend!

So we actually had a quiet week here at BD catering, not slow by any means just not super crazy busy. Which is a good thing because next week is looking like it definitely will be. We took advantage of worked on our treats for the Valentine's, since people have already been calling us up ready to order. So here are some pics of some cuppies on the valentines menu.

Ravenous for Ravioli!

Happy Wednesday all!

Howdy? Hope you're all enjoying 2011 and a nice quiet calm after all the festivities of the holidays.

As usual we are still busy here at BD catering but its a refreshing kind of busy.

In the spirit of new year resolutions and the like, we are sharing a recipe that I think will help you keep at least two of the more common resolutions:

1. Healthier eating habits
2. Having real home cooked meals & family time

This recipe is also great for entertaining and a good make ahead dish. It is super easy and broccoli is a calcium rich and healthy alternative filling for this pasta.


Broccoli and Cheese Ravioli Filling
Ingredients:
1/2 cup OR 1 Crown of Broccoli
1 small Onion (medium diced)
1 tbsp olive oil
Salt and Pepper to taste
1 tbsp low fat cream cheese
1/4 tsp chili flakes (Optional)

Method:

Roughly chop broccoli into small pieces, not just the florets but the stalk too. Yup that's edible!
Peel the stalk with a vegetable peeler the inside is tender and has amazing flavor.




In a hot pan add the olive oil, onion and chili flakes (if you wish). Cook lightly until the onion is translucent then add broccoli. Saute until tender to the bite. Season with salt and pepper to taste.
Remove this mixture from the pan to a small bowl and allow to cool slightly. Once cooled add 1tbsp of the low fat cream cheese and mix.



To make the ravioli you can your make your own pasta which we love to do. Or you can use a super time saving method and use wonton wrappers! You can find these at your local grocery store in the freezer section.

I cut the wontons in four and spooned little bits of mixture onto 2 of the squares, brushed the edges with water and sealed with the other 2 pieces of wrapper.


This makes about 30 ravioli. For an appetiser portion we serve 3 and for an entree we serve 10 but I assure you chef ed can eat about 20 0f these happily. So for hearty eaters double the recipe. If you are making ahead store in a air tight container with wax paper separating each layer and refrigerate for no more than 2 days or freeze for up to 2 weeks.

Cook ravioli in boiling salted water a few at a time. When finished they float to the top. Remove from water and toss in your favorite sauce!

We hosted our 1st one Dec 28th and it was a blast!
Perfect for little foodies or crafters. The children really enjoyed themselves.
