3 Yummy Things


Heeey good looking....what yuh got cooking?

Too much? O well, tee hee.
How was your week so far?

So this is a new segment of the blog that we are going to do at least once a month. Featuring 3 yummy things we enjoyed and think you would too.

So lets get to it:

1.
Ferrero Rocher Gateau... I know right!

Ok so its 2 layers of chocolate cake filled with Nutella buttercream and crushed hazelnut wafers, covered in chocolate buttercream, topped with ganache, toasted hazelnuts and Ferrero Rocher Truffles.

We made this for one of our regular clients and I fell in love.



2.  Chop Salad from the Grille Restaurant at The Hilton
    Sounds simple right? Do not be deceived. This salad was soooo good!
    From the crisp lettuce to the rich bacon and the refreshing vinaigrette with light citrus undertones.
   But the star of the salad for me was the smoked avocado puree. Let me tell you, that was a bite of       creamy, smokey lusciousness!



3. Lemon Meringue Cookies by Presidents Choice
These cookies are amazing! They are the perfect mix of melt in your mouth and crisp and crunch. And the little bites of meringue are lovely surprises to your tongue.

10 Interesting Chocolate Facts





Hey guys,

Its February 15th, so in the theme of  Valentine post celebrations... lets talk about Chocolate!









10 Cool facts about Chocolate


1. Chocolate has over 600 flavour compounds as opposed to red wine which has about 200. And you       thought wine snobs were oh so fancy, didn't you?

2. Chocolate was consumed as a liquid for 90% of its history. Yes, we're doing it wrong guys.





3. Montezuma II, the Aztec emperor consumed more than 50 cups of chocolate a day. I wonder what     his food pyramid looked like.

4. Soldiers were sometimes paid in chocolate during the Revolutionary War. Sounds more fun than         dead guys on paper to me.

5. The first chocolate bar was invented in 1847 by Joseph Frye. Now we're deep frying chocolate            bars more than 100 years later. Imagine that.

6. Blond Chocolate is a rare variety to its milk, dark and white cousins. Blonds have the most fun.           Look it up. 


7. Some darker chocolates can have enough caffeine in them to match one bottle of Coke. Now you       have even more choices for your caffeine fix.

8. Chocolate Milk was invented in Jamaica. Yes, Jamaica. By an Irishman.....blink blink......

9. Andes Candies were originally Andy's Candies.The named changed because it's kinda awkward to     give a girl candy with another guy's name on it on Valentine's Day.

10. The Ivory Coast in Africa itself produces 33% of the world's cocoa. I feel a rendition of "Ebony           and Ivory" coming on.

Big things to come


Hey guys we're back!

Yes ...yes I said we. As in plural. We have a new, well "new-ish" blogger in these parts. Ed!!!!!! Whoop whoop!

I know I've been off and on with writing, and I'm just going to be honest. I LOVE writing! But somehow running a catering and pastry business and a home which I also LOVE makes it a little difficult to stay consistent since time seems never enough. Somehow I convinced myself that after having my little baby bear, it would be easier.

 Clearly it wasn't.

But alas I had an enlightenment why not ask my hubby, business partner, fellow food lover and chef if he was interested in sharing his foodiness with you guys. After all we are a tag team in all other aspects of life and it works brilliantly! Why not.



Guess what? He said yes!
Happy Dance!!!


Ok so here's whats up. We have lots of fun stuff coming up. New recipes, collaborations, cooking tips, interviews with other chefs, reviews and tons more.

We cannot wait to begin sharing.

My 1st Product Review


Hey there!

Today I am going to share my thoughts on a snack, I found here in our local supermarket. I've heard the name floating around the webisphere. So when I saw them in the store, I just had to try them.

So what I tried was a "Food Should Taste Good" brand snack. Specifically the All Natural Tortilla Chips, jalapeno flavor with crushed red pepper flakes.


I really enjoyed this product. It is a hearty chip packed with flavor. The premise of the company is to use all natural, good quality ingredients. 
These chips are: 
- Gluten free
-Whole Grain
-No MSG 
-Contains 0g trans fat
-Cholesterol Free
-Vegan & Kosher


What I liked about the chips:

Texture: It is a sturdy chip, I could definitely use these as a vessel for a passed canape. They are a thicker cut than typical restaurant style tortilla chips. You can notice the whole grain but in a pleasant way. And you get that satisfying crunch as you bite in.

Flavor: The spice is real y'all! I can definitely taste the jalapeno and red peppers, although not overbearing for me. To me the seasoning is on point, not over salted and not greasy at all. 

Natural all the way. Even the color comes from beets!


I ate these straight up, but I had some company over and I served them with some Pico de Gallo and they were great. Comment below if you would like my recipe for "Pico".

Coffee popsicles



Soooo I have, had my hands full with my little nugget and wedding season. Weddings every weekend... whoop whoop! Don't you guys just love, LOVE! Sigh... romantic at heart.

Anywho with all this running around in this heat on limited sleep, Iced Coffee sounds great! But even better are Coffee Popsicles! So today I am going to share a quick easy recipe for these yummy treats.



Coffee Popsicles (makes 4-6)

1 Cup brewed coffee (or you could use instant coffee like Nescafe granules)
1/4 cup sweetened condensed milk
2tbsp sugar
1/4 cup heavy cream

Method:
Once your coffee is brewed, add the sugar, milk and cream and stir until dissolved.
Allow to cool . Pour into Popsicle mold and freeze for 4-6 hrs.
Un-mold and enjoy!

Tip: To un-mold, dip the mold in a glass of hot water for 15 seconds, remove and wiggle the pop stick and it should come clean out.

I really hope you love these as much as I did.

Sidenote: I am now a proud breastfeeding momma, so I am thinking, I will  share some recipes and foods which help with milk production and energy boosting. Also when little one begins to wean I will share some baby food recipes. If there is anything you guys would like me to add be sure to comment.

Easter Gift and Mini Cupcakes

Easter Greetings Everyone!

Exactly a week ago today, our mini cupcake arrived. He is a bundle of squirms and smirks; our little Easter gift. To celebrate, I decided to make some cute mini coconut cupcakes. This was perfect since my little cousin's birthday was the day after our little one's birth, so it could be one big celebration!


Here are the minis; naked and cooling. 

To top them, I made a green coconut buttercream. 


On top of the buttercream I sprinkled some colored, sweetened coconut and these adorable, tiny chocolate bunnies.



The bunnies are by Russell Stover and are called "Iddy Biddy Bunnies". To color the coconut, place the coconut in a sandwich or Ziploc bag. Add a few drops of the green dye and shake the bag until the color is evenly distributed.


Look how cute!


Here they are! They totally remind me of the spring I spent in Germany. It is hard to appreciate spring here in the tropics, as we don't experience winter.
After the cold winter it was nice to see the little bunnies hop around the parks and the bright colored tulips pop up everywhere.


Here is a quick recipe for the buttercream I used.

Coconut Buttercream

2 cups icing (confectioner's) sugar
1/4 cup butter/margarine
1 tsp coconut extract
2-3 tbsp coconut milk
3 drops green food coloring (optional)

Method:
Cream the butter and icing sugar together, add the coconut milk a tbsp at a time checking the consistency.To ensure it is creamy but pipe-able. Add the extract and color and mix until combined.

Cravables


Sooo as promised, today I am going to share some of the foods that I've been craving this pregnancy. Oddly enough, a lot of my clients and friends are also expecting and hearing the foods they craved was really interesting.

So here are a few of mine-

Watermelon
Tangerines

Fruit in general (after the 1st trimester)

Ham
Eggs
Souse
Fish Cakes!!!
Cheese
Cou cou


As far as aversions go, I just could not stand the smell of chocolate my first trimester. Ugh! It was horrible as we work with chocolate every day!

Well, working through morning sickness and a huge work load allows little time for personal stuff like making dinner so we had some really quick meals. One of my fav quick meals is quiche. For some people, this isn't a quick meal but you can go ahead and cheat with store bought pastry. Our recipe for the pastry is super easy. What I like to do is make a big batch and freeze it in the pie tin when I have a bit of free time and then pop them out when we are ready to make the quiche. So here is the recipe for the pastry.

Shortcrust Pastry

8 oz flour
4 oz cold cubed butter
pinch of salt
4-6 tbsp ice water

Method:

In a bowl, place flour and salt and mix together.
Add butter. With a fork,(or pastry blender) cut butter in to flour until it looks like fine breadcrumbs.
Make a well in the center and add water. Mix in until it starts to bind. Form pastry into a ball.
Allow to rest in fridge for 10-15 mins before use.

If you are going to freeze the pastry in tins, at this point roll it out and line your tins. This recipe makes two 8" rounds. Wrap the tins well with cling wrap and freeze.

Quiche Filling Ideas:


- Ham, Cheddar and Sweet Peppers
- Bacon, Leeks and Gruyere
-Spinach, Onion and Cheddar
- Tomato, Basil and Mozzarella


Quiche is obviously an egg based dish. For the egg custard for one quiche, I use 4 eggs and 1/4 cup milk seasoned with salt, pepper and nutmeg.


Here is a quick bacon and onion one we made for dinner one busy night. Add a bit of salad and  ...Voila!

The Announcement


Hey guys!

Thank you for your patience. Actually perhaps you already know what our announcement is. If you are on our pastry page, you have seen our notice. If not here goes.... drum roll please ......

Chef Ed and I are having a ...BABY! 


We will actually be closed for the month of April, both our catering and pastry kitchen. But I intend to blog away as we await little one's arrival. 

It was so hard keeping a secret from you guys, pregnancy is very interesting on the palate. And I have had some really interesting foodventures.

We had a photo shoot with the fabulous Brian Elcock of "Bcreative Photography". Below is one of the images. We will definitely be working with and recommending him in the future.

Valentine's Day Recap and an Extra



Heya!

I'm back, with my tea. I know V'day was ages ago but I promised a recap so here it is. One thing I noticed this year, more than before was all the anti-valentine people. Their premise being that love should be shown everyday, which I completely agree with. However, is not Valentine's Day a day as well? I don't know but I just think its so sweet that everyone shows extra love all together on one special day. But I may be partial because Ed  and I celebrate ev-er-ee-thang! Life is too short =)


So here are a few pics of the goodies we made for clients for V'day:

For you guys who are apparently showing love all year long .. hopeless romantics unite! 
One thing Ed and I like to do to show love to each other is to surprise each other with breakfast in bed. One of my fav things to make is homemade pancakes. Dude! It is so crazy how many people use box mix. Pancakes are super easy! I promise you this recipe takes the same if not less time to make and is super delicious. And no weird additives! So here goes, my basic recipe for pancakes.

Pictured is a lemon poppyseed variation with berries and bacon. 


Fluffy Breakfast Pancakes

1cup flour (you can use whole wheat as well)
1tbsp baking powder
1 beaten egg
1tbsp oil
1tbsp brown sugar
3/4 cup milk
1 pinch salt
1/2 tsp cinnamon (optional)

Method: 
1. In a bowl mix flour, sugar, salt, cinnamon and baking powder. (TIP ALERT - if you want to make your own box mix you can bottle or package this mix in a Tupperware and store and just add the oil, milk and egg when you are ready to cook the pancakes. Just make a little note and attach with the amounts for the other ingredients to be added and put on top. It lasts up to 2 months) 

2. To the mix add the egg, milk and oil and whisk lightly until everything is incorporated. Batter will be slightly lumpy but do not over-mix. 

3. In a lightly greased non-stick pan or griddle cook your pancakes on medium heat. You will know your pancakes are ready to flip when you see bubbles appear around the edges. 

Here are some additions I like to use to change things up: 
- Chocolate chips
-Lemon zest 
-Poppy seeds
- Apple chunks 
- Berries
- Oats
-Toasted Nuts

With A Cup of Tea



Hi Guys, 


Where did the time go?  This year is zooming by! Lets catch up.
Well then, lets get comfy and for that we need a cup of tea and something yummy.

The tea I'm loving right now is a Lipton Green Tea with acai berry, melon and dragon fruit flavors. Its super refreshing and light.

For the something yummy I just have to share with you this delicious apple bread!



Apple Bread

Topping/ Filling:

2 large apples (diced) 
2 tbsp brown sugar 
1 tsp cinnamon
1/4 cup sliced almonds 

Batter:

1/2 cup butter
3/4 cup sugar
2 eggs
11/2 cup flour
1/4 cup quick oats
11/2 tsp baking powder
1/2 cup milk
1tsp vanilla
1 tsp lemon zest


Method:
Preheat your oven to 350 F and grease and flour a standard loaf pan 
In a small bowl mix apples, sugar and cinnamon and set aside.

In another bowl, cream butter and sugar together until light and fluffy. 
Add eggs one at a time and mix until incorporated
Sift flour and baking powder into mix and fold in, add oats.
Mix in milk, vanilla and lemon zest.

In the loaf pan add half the mix, spoon over apple mix and sprinkle with half the almonds
Add the other half of of the batter and top with the remaining apple and almonds

Bake in preheated oven for 45 mins or until a toothpick comes out clean when inserted.



I really hope you guys try this recipe. The apple totally infuses the entire bread and makes the bread  deliciously moist.

Cozy Morning Breakfast

Happy New Year! 


I can't believe its already 2014. I hope everyone had a wonderful holiday season!
For our Christmas celebration, we had a little family brunch; rather than a traditional dinner or lunch like we usually do. I decided to take 2 breakfast casseroles. They are super easy and serve a crowd well. As I was thinking about it, these would be great for a weekend breakfast. Especially when the little ones are home. They can be made ahead and refrigerated.

Today I am going to share one of the recipes (the other one I will share in future). It's my recipe for French Toast Casserole.

French Toast Casserole


12 slices of bread (I prefer whole wheat)
5 eggs
1/2 cup milk
1/4 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
1 pinch salt
2 tbsp dried cranberries (optional)
3 tbsp butter (softened)

Method:

Cut slices of bread into 4 triangles each.
Grease casserole dish with one tbsp butter.
Arrange slices of bread in dish to cover the base and overlap.
In a bowl mix eggs, spices, milk, sugar and salt.
Pour mixture over the bread and allow to sit to absorb the liquid. (If you are making this the night before at this point you can cover the casserole and refrigerate, just allow to come to room temp before baking).
Preheat the oven to 350 degrees F.
Dot with bits of the butter and sprinkle dried cranberries over the top. Bake for 15 mins.

This is so yummy on its own but feel free to serve with maple syrup and crispy bacon!

Boxing Day Treat!



Merry Day After Christmas!


I hope you all have had a wonderful Christmas with your loved ones. Enjoying all the yummies and celebrating the true meaning of Christmas. Now that all the busyness has died down, lets enjoy boxing day. I always loved the idea of this holiday, its like a recovery day from the celebrations. A nice quiet day to relax.

In this weather, all rainy and chilly it feels wonderful to curl up with a cup of hot chocolate. So today I want to share a recipe for my "Spiked and Spiced White Hot Chocolate".



Spiked and Spiced White Hot Chocolate

SERVES 4

4 cups of  half and half (or milk even almond milk is super delicious in this)
8ozs chopped white chocolate
1 tsp vanilla extract
1/2  tsp ground nutmeg
1/2 tsp ground cinnamon
3ozs brown rum
Marshmallows and nutmeg for topping



Method:
In a saucepan bring half & half or milk to a simmer. Add chopped chocolate, vanilla and spices and stir until chocolate is dissolved. Remove from heat and add rum. Serve immediately topped with marshmallows and a sprinkle of nutmeg.

Now just grab a blanket and cuddle up by the tree with a good book or movie!

Unexpected Side of Fries



What's going on peeps? I hope you're all getting into the festive mood. The weather actually has a slight chill to it and the Christmas music is playing everywhere. To continue the theme of entertaining, I want to share a super simple side dish with you. You can add it to buffets, serve it with a steak or just as a snack for pop up guests with a delicious dip. Its Cassava Fries!

I think I have always loved cassava. In Barbados its most famous appearance is probably in Cassava Pone (which I will admit I am a tad bit addicted to) but this delicious root is far more versatile than we may think.


Cassava is also called manioc and yuca. Some other dishes you can create are cassava casserole (like scalloped potato) , bammy/bami  (Jamaican Cassava Flat Bread) and Cassava soup.


So here is the recipe:

Cassava Fries


1lb cassava (peeled and cut into 4" sticks)
Oil for frying 
Salt and Pepper to taste
Boiling water for par- cooking

Method:

In a pot, boil water add salt and cook cassava until fork tender.
Once cooked, drain and allow to cool.
In a skillet heat oil until it bubbles when a sprinkle of flour is added to test it.
Fry cassava until golden and crispy. Remove from oil, drain and season with salt and pepper. 


These are absolutely delicious and a welcome change to a typical menu. I hope you guys give them a try.

Holiday Brunch with A Yummy Recipe


It's  December!!!! I am so excited for Christmas. There is so much yumminess planned for the holiday season. This weekend we hosted a holiday brunch.  So today I will share some pics, ideas and an easy delicious recipe.

Brunch is a great option for first time entertainers, because the dishes aren't too complex. Simple pieces can be impressive.

Here is the menu: 

Honey Glazed Turkey Ham Sandwiches



Potato and Bacon Breakfast Casserole
Banana Muffins 

Granola Yogurt Parfaits ( simply layer yogurt and granola in shot glasses, perfect for single serving)  


Fruit & Cheese Platter ( which we refilled with plantain chips and other fruits)



The cheese in middle is marinated fresh mozzarella. These were bocconcini, which are bite size mozzarella balls. You can use a regular ball of mozzarella and cut it into bite size pieces . 

Here is the recipe for the marinade: 


1/2 cup extra- virgin olive oil 
1 tsp lemon zest 
2 tbsp chopped parsley leaves
1tsp chopped thyme 
1 clove garlic sliced thinly 
1/2 tsp red chili flakes 
1 tsp kosher salt

Combine ingredients and add mozzarella (about 16oz) toss and refrigerate in a covered container for at least 3 hrs or overnight.

The Most Wonderful Time of the Year!



What's cooking guys?

I know I've been missing in action, but there are lots of big things that have been happening that I can't share just yet.

So, this is my all time favorite time of the year; not just Christmas but November too! I love all the Independence celebrations and local food! Conkies, Fishcakes, Coucou, Souse, Breadfruit and so much more! Yum! Also, the atmosphere just begins to feel so festive. Even when we lived in the US, I soo loved the fall flavors there too!

So along with all the celebrations, there are going to be lots of parties and get-togethers. So just in case you are going to be a host of a social, here are some tips and ideas for party foods.

1. Individual Portions (so easy for serving and easy clean up)

Pudding and Souse Cups 

2. Signage:-  

This makes it easy for self service and everyone knows what each item is.



3. Interactive food stations like a fondue or a taco station:- 

This adds to the activities and is good for picky eaters.

Cinnamon Buns? Yes Please!


Hiya luv muffins! 


How's it going? So I thought I would share one of my comfort foods with you guys. I am one of those strange people, who when they feel overwhelmed or tired from work, finds comfort in doing a project in the little free time they do have.

So after a crazy week of baking, cooking and events I love to whip out my worn spiral notebook with my favorite recipes and make something yummy. Well to be honest I either do that or give my house a good scrub down ... sigh so invigorating. Yes, I know I'm strange.

Today's recipe is for Nutty Cinnamon Buns. Now the nuts are optional but we had walnuts, macadamia nuts and almonds that were just begging to jump in the do!



Cinnamon Bun Recipe


Dough:
2 cups flour
1pk yeast
2 tbsp sugar
1/2 cup warm milk
pinch of salt
2 oz melted butter
(1 beaten egg for egg wash)

Filling:
1/4 cup melted butter
2 tbsp cinnamon; 2 oz brown sugar mixed
1/2 cup chopped toasted nuts (optional)


Frosting:
3oz cream cheese
1 tbsp butter
11/2 cups icing sugar
1/2 tsp vanilla extract

Method:

In a small bowl dissolve the yeast in the warm milk and set aside.
In a larger bowl mix sugar, flour and salt.
In the middle make a well and add melted butter and milk; mix in with hands until a dough is formed.
Knead slightly, dough will be slightly sticky. Place in a lightly oiled bowl. Cover and place in a warm place to rise for 30 mins.

For the filling just combine the ingredients (except butter)together.

Once dough has risen, roll out on a lightly floured surface to make a rectangle approximately 12 by 4 inches. Spread melted butter over the top and sprinkle with filling. Roll dough up tightly as if to make a jelly roll and cut into equal pieces. I used a casserole dish which I lightly greased. You can use any high sided baking sheet. Place your buns (tee hee) in the dish allowing space for rising. Cover loosely, allow to rise for 20 more mins and then brush with beaten egg. Bake for 20-25 mins at 350 degrees F.

Meanwhile, in a medium bowl mix the ingredients for the frosting together until fluffy. You can use a hand mixer but a whisk works just as well.

Once the buns come out of the oven....


Looking all yummy and golden brown, allow them to cool slightly for about 5 to 10 mins. 
And then smother the tops with the cream cheese frosting.

I do hope you guys try this recipe, it really is worth it and is really simple.
I suggest pairing these with a nice cup of Chai tea, but I'm a tea fanatic. I'm sure a nice glass of milk would be delicious too. Hope you're having a delicious week.

I'm back with pizza



I missed you guys!

So sorry I've been away but I've been completely under the weather the last few weeks. But yummy soup and lots of TLC and I'm back!



So school has restarted and is in full swing. Many of our clients are part of busy families so, I thought it would be great to feature easy meals for lunches or quick suppers.

Today is pizza!

People seem to think that homemade pizza is super time consuming and should only be a weekend meal but that is not at all true. Some people even think of it it as junk food... gasp! It certainly does not have to be.

So here are some tips on how to make yummy healthy homemade pizza in a whizz!


Make it healthy
- Use lots of veggies, get your little ones to help you dice them up
- Try new things like fresh mozzarella cheese and mushrooms
- Choose leaner protein like chicken breast chunks instead of pepperoni


Make it quick
- Pre-make your dough and freeze it so that it takes no time at all
- OR buy a pre-made dough, lots of supermarkets carry them now
- Use a pre-made sauce and ready shredded cheese

DOUBLE DUTY
Our dough recipe is enough to make 2 pizzas so you can make double and cut the next one up for lunch boxes the next day!

Dough recipe:
3 cups flour
11/2 pks of instant yeast
2 tbsp oil
1 cup water (warm)
pinch of salt

Mix yeast and warm water in a bowl until yeast is dissolved, add flour, oil and salt and mix until a dough is formed. Place in a greased bowl in a warm place to rise for 15-30 mins. (Roll out and par-bake for 10 mins at 350 F if using later) This dough freezes very well and keeps up to a month.  I also par-bake if I'm making it right away but its not necessary.

Dining In Tonight



Hey guys!

So its been a slight minute. We had a whole bunch of weddings and events so there is so much to share! 

What I'll share today is one of the services we offer which has been booming recently; it's our "dining in" option. 

Couples are choosing our 3 course meals delivered to their home or getaway location. I think this is a super idea. Its more intimate than a restaurant, you can pick and choose your menu, and it is totally exclusive. We also offer a wine paring and table set up.
