Farmers Market Morning



Hey foodies! Wassup?!

    So, when we were living in Germany, one of my favorite things was the farmers markets. Everything is so fresh and beautiful.
    I've been wanting to visit one here forever, but they are always on Saturdays. Weekend is the busiest time of the week here so that was  not possible. Finally I got to go, Yippee!





So I have been to markets here before, like "Cheapside Market" but this was different. It was very cozy and the atmosphere very calm and relaxed.

I got some passion fruits, french bread, and a basil plant. I would definitely go again. You should check it out. Farmers market; Saturday mornings at Art Splash in Hastings.

Risotto Dance





What's Cooking Guys?

When I first starting working as a chef, one of the things I dreaded cooking was risotto because I thought it was going to be so complicated. I was about 17 and I was working at Sandy Lane Hotel.

 One night for a big gala, we had to make a massive vat of risotto. Now I am pretty small, I could literally fit into the pan we were cooking it in. So the chef who was teaching me how to make it said in his thick Italian accent, " no worries, just risotto dance." The risotto dance is the way you stir the rice to create that creamy, luxurious consistency. He made it so easy and fun!

 And so I learned to make one of my favorite dishes. And I want to share the recipe for a butternut squash risotto with you today.


Butternut Squash Risotto 

Serves 3-4 Dinner portions Or 6 Appetizer Servings 

4-6 cups chicken or vegetable stock
4tbsp butter
1 small onion (finely chopped)
1 cup butternuts squash peeled and diced - approx 1/2 inch cubes
1 cup of arborio rice
1/2 cup white wine (preferably dry)
1/2 cup fresh grated Parmesan cheese
Salt and Pepper to taste


Method: 

1-Warm the stock and keep on hand. In a heavy bottomed saucepan, melt 3 tbsp of the butter and cook onion until translucent.
2-Add the rice and cook for about 2 mins to give the rice a slight toast. Then add the wine and stir constantly until wine is absorbed.



3-Add a few ladles of stock; just enough to barely cover the rice. Cook over medium heat until stock has been absorbed. Continue cooking and stirring rice; adding a little bit of stock at a time, cooking and stirring until it is absorbed.


4.After about 10 mins add the butternut squash.Continue cooking until the rice is tender, but still firm to the bite.
 During the last minutes of cooking, add remaining tablespoon of butter and Parmesan. The rice should have
 a fabulous, creamy consistency. Season to taste. 
We served ours with a slice of roasted chicken, a sprig of basil and some herbed oil.

Sweet & Spicy Sandwich Spread


     

Hi all! What's good?



   
  So Ed is a total sandwich king! This man loves sandwiches. So we love to get creative with our sandwiches. Sometimes typical cheese paste and tuna paste are so boring. I love to make spreads to add some flavors to our heartier sandwiches like subs. So here is a quick recipe of a spread we like to use on our fish subs and sandwiches.

Spicy Lemon Spread

3oz mayonnaise
1tbsp lemons juice
2tsp capers (chopped)
1tsp (chopped) jalapeno
1/2 tsp paprika
1tsp honey
1tbsp chopped chives
1/4 tsp chilli flakes
Salt to taste

Method: Mix all ingredients together in small bowl until combined.
ENJOY!!!

Every little girl wants a Pony!



Okay... maybe not every little girl, but this little girl did! And so did the little girl whose birthday party we catered last weekend.  There is just something so magical about horses and ponies, that just makes the little girl in me excited. So off we go to the stables for a happy Saturday afternoon party.


Look at them! The brown one just had too much styles for me. Posing for the cameras and prancing.

It really was a fun party, with perfect weather and the cutest little area for the children to eat and play.

Fabulously Yummy Wedding Gifts


Hey Everybody!


So today I want to share this super gift that a bride recently gave her bridal party.

When we cater a full wedding, we always give the couple a breakfast basket; with breakfast goodies and some of the food from the wedding they may not have had a chance to try. As a former bride, I know that sometimes there's so much going on that you don't always get to try everything. Also the last thing you want to do the next day, is cook or hunt for a breakfast spot. I also take breakfast baskets to weddings when we are guests and the newlyweds love them!



This bride took it to a new level! She ordered the baskets for her bridal party so that on the day of the wedding they would have some yummies while they were getting ready as the guys and the gals had sleepovers in order to get ready on time. So check it out.

New slaw, old slaw ... Coleslaw!


What's cooking luvs?

So the 3 most common salads on the typical Bajan buffet are, tossed salad, potato salad and ... you guessed it; coleslaw. Although these are common favorites because they are delicious, it doesn't mean that we can't spruce them up with a little love and try something different.

This recipe adds a little zip and a pop of colour to the traditional coleslaw, enjoy!



Red Cabbage Coleslaw with Toasted Almonds and Poppy Seeds

Ingredients

Serves 2-4 persons
Slaw-
1 cup shredded red cabbage
 1/2 cup grated carrot
 1/4 cup roasted almonds
 1 tbsp minced onion

Dressing
2ozs Mayonnaise
1tbsp fresh lime juice
1 tbsp honey
1 pinch cinnamon
1tsp poppy seeds
Salt & Pepper to taste

Method: 

Mix all the slaw ingredients together in a large bowl (reserving a few almonds for garnish). 
In a smaller bowl, mix the dressing ingredients together until combined. 
Pour dressing over the slaw and toss lightly. 
Garnish with remaining toasted almonds and refrigerate until chilled. 
Serve and enjoy the yumminess!

Hey there!

Just wanted to share some of our recent wedding cakes, just in case you missed them on our facebook page and a few tips.

3 tips on choosing your cake:


1- Make it personal. It is your day after all, be sure to include small details that are special to you.
2- Choose a flavor you love, no one said you have to be traditional.
3- Think of your guest count. A small cake can look insignificant in a ballroom of 200 and a small wedding doesn't need to have a huge tower.
